Oxidation is one of the most fundamental processes in biology, and one of the more double-edged. The same reactions that let cells extract energy also generate free radicals: unstable molecules with an unpaired electron that react readily with whatever sits nearest. Left unchecked, that reactivity propagates in a chain, each molecule destabilising the next.
Antioxidants interrupt the chain, but no single one covers every kind of free radical. This is the reasoning behind combining them: even within one chemical family, such as the well-studied phenolics, different compounds counter different reactive species, so a considered combination spans more of the range than any alone. Some also slow the oxidation of others, extending how long the group stays active.
